Yummy and Easy - Chewy Chocolate Slice Recipe

Yesterday was a great day for baking ... and playing with my camera.

Several people have been asking me to blog the recipe for the Chewy Chocolate Slice that I always make. It's a great hit - for the kid's afternoon tea, school functions and cake stalls. It's always extremely popular with adults and kids alike.

This slice has just the right amount of chocolate, it's yummy and chewy and fantastic with a cup or tea or coffee.
And super easy to whip up, all in one bowl, I don't even sift the flours.
It takes less than 30 mins from go to whoa!

Chewy Chocolate Slice

125g butter, melted
1 cup (220g) firmly packed brown sugar
1 egg
1 teaspoon vanilla extract
1/2 (75g) cup plain flour
1/4 (35g) cup self-raising flour
2 tablespoons cocoa powder
1/2 (40g) cup dessicated coconut

Chocolate Icing
1 cup icing sugar mixture (or plain icing sugar)
2 tablespoons cocoa powder
2 teaspoons butter (I often don't bother with this)
1 tablespoon hot water

  1. Preheat oven to 180C. Grease the slice pan.
  2. Combine butter, sugar, egg and extract in bowl. Mix in the flours and cocoa then dessicated coconut. Spread mixture over base of pan.
  3. Bake about 25 minutes or until firm.
  4. Chocolate icing: Mix icing sugar mixture and cocoa into small bowl; add butter and the water, stir until smooth. Spread onto slice while still hot.
Serve on a pretty plate with flowers your daughter has picked from the garden!

or just cut up and serve to hungry kids from the pan....

I challenge you to stop at one piece
originally found the recipe in the AWW cook book but I've simplified it a little bit.

So there you have it, a super easy, yummy chocolate slice recipe. Try it out and let me know what you think.

cheers
Fiona

  4. Just curious what size would your slice pan be and please describe it because we don't have something we call slice pans here in Canada. Thank you in advance.

    1. hi Canadian friend - have a look at this http://www.everten.com.au/Bakers-Secret-Lamington-Pan.html or a lamington pan (although I think lamingtons are only in australia also. it's like a cake pant hat is only an inch high and is about 19cm by 29 cm or something like that does that help?
      good luck cheers Fiona
